This recipe was a result of several trial + error recipes using pork sausage. Although our family loves pork sausage, (I mean come on, we are hog farmers + all) finding recipes that call for pork sausage are difficult to find + take a bit of creativity.
This recipe has a few unique ingredients that I didn’t initially think would taste great together in a soup, but after throwing everything together the flavor is fantastic!
Each time I try a new recipe I’m always skeptical to test it out with the Hubs because he is incredibly picky! (Crazy enough, I never worry about Luke (our son) because he will eat pretty much everything! THANK GOODNESS I have someone else in our home who enjoys trying new recipes just as much as I do!) BUT as it turns out, the Hubs actually really enjoys this soup! (insert happy dance 🙂 )
This is a super easy + delicious recipe the whole family is sure to love!
- 1 1/2 lbs ground Pork sausage (I use pork sausage, but feel free to use any kind of sausage)
- 1 orange pepper (chopped)
- 1 white onion (chopped)
- 2 large carrots (peeled +chopped)
- 1/4 cup flour
- 6 cups chicken broth
- 1 (10-12 oz) package refrigerated cheese tortellini
- 1 cup milk
- 1 TBSP garlic powder
- salt + pepper
- Cook sausage in a large pan until browned, don't drain
- In large pot stir in orange pepper, onions + carrots + drizzle with olive oil. Cook for 5 minutes, stirring occasionally.
- Add in the garlic, salt + pepper + saute for an additional 1-2 minutes, stirring occasionally.
- Stir in the flour until it’s evenly coating the veggies, + cook for an additional 1 minute, stirring occasionally.
- Gradually add in the chicken broth + stir.
- Continue cooking until the mixture reaches a simmer. Then reduce heat to medium-low and simmer for 5 minutes.
- Stir in the cooked sausage, tortellini + milk, continue simmering for 5 minutes
- Reduce heat
- Serve + Enjoy!
- Will need one large pan + 5 quart pot
