This recipe has been a family favorite for many years and I am thrilled to share it with you all!
I was extremely fortunate to have been raised by an amazing family and better yet, talented women in that family who just so happen to be amazing cooks and even better bakers! I vividly remember spending time at my Aunts homes and ALWAYS being spoiled with homemade treats!
I am excited to say that one of my Aunts gratefully passed this recipe down in hope that you will all enjoy it as much as we do!
THE SECRET WITH THIS RECIPE IS ALL IN THE INGREDIENTS!
- Make sure to use Libby’s Pumpkin !(NOT Pumpkin Pie Mix)
- When purchasing the ingredients for this recipe I was a bit skeptical not using an Organic Pumpkin, however, after looking at the ingredients on the Libby’s can I was reassured when I saw “Pumpkin” was the ONLY ingredient! (No artificial flavors or preservatives. Just 100% PURE Pumpkin.)
- Make sure to also use UNSALTED butter! (I prefer Kerrygold butter)
- I prefer to use Kerrygold butter because the butter comes from grass-fed cows who are FREE of added growth hormones. (My family has become accustom to grass-fed beef with no added hormones, and so we look for the same in our daily products.)
I will be honest, this is one of the FIRST EVER recipes I have successfully baked in my entire life and believe it or not, the bars actually turned out just as I remembered!

- 1 1/2 cups sugar
- 1/2 cup oil
- 3 eggs
- 1 1/2 cup flour
- 1 (15oz) can Libby's PUMPKIN (NOT PIE MIX)
- 1 1/2 tsp. baking powder
- 1 tsp. vanilla
- 3/4 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 (8oz) cream cheese
- 1 stick butter (Kerrygold unsalted)
- 1 1/2 tsp. vanilla
- 4 1/2 cups powdered sugar
- 3 Tbsp. milk (I prefer almond milk)
- 1 1/2 tsp. cinnamon
- 1 Tbsp. pure maple syrup
- Mix/blend all ingredients together in a mixing bowl. When mixing is finished pour mixture into greased pan.
- Bake at 350 degrees for 25 minutes.
- Mix ingredients together and place aside.
- Frost bars when cooled.
- Use 9 x 13 pan
